Description

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 8 ounces white chocolate, melted and slightly cooled
  • 1 cup sour cream
  • 1 can (21 ounces) cherry pie filling

Instructions

  1. Preheat the oven to 325°F.
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  4. Bake for 10 minutes, then remove from the oven and let cool.
  5. In a large mixing bowl, beat the softened cream cheese with 1 cup of sugar and vanilla extract until smooth and creamy.
  6. Add the eggs one at a time, mixing well after each addition.
  7. Gradually pour in the melted white chocolate, mixing until fully incorporated.
  8. Stir in the sour cream until smooth.
  9. Pour the cheesecake batter over the cooled crust in the springform pan.
  10. Bake for 50-60 minutes, or until the center is set but still slightly jiggly.
  11. Turn off the oven and crack the door open, letting the cheesecake cool in the oven for 1 hour.
  12. Remove from the oven and let it cool to room temperature.
  13. Refrigerate for at least 4 hours, or overnight for best results.
  14. Once chilled, spread the cherry pie filling evenly over the top of the cheesecake.
  15. Slice and serve.
