Description
A delicious and visually stunning whole roasted cauliflower dish drizzled with a rich butter sauce, perfect for elevating any dinner.
Ingredients
- 1 medium head of cauliflower (about 2 to 3 pounds)
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup unsalted butter
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 425°F.
- Remove the leaves from the cauliflower and trim the stem so it can stand upright.
- In a small bowl, mix together the olive oil, salt, black pepper, garlic powder, paprika, and red pepper flakes (if using).
- Place the cauliflower on a baking sheet and brush the oil mixture all over the cauliflower, ensuring it is well coated.
- Roast the cauliflower in the preheated oven for 30-35 minutes, or until it is golden brown and tender when pierced with a fork.
- While the cauliflower is roasting, melt the butter in a small saucepan over medium heat. Once melted, remove from heat and stir in the lemon juice.
- Once the cauliflower is done, remove it from the oven and drizzle the butter sauce over the top.
- Garnish with chopped parsley before serving.
Notes
- For a smoky flavor, try adding a teaspoon of smoked paprika instead of regular paprika.
- To make it a complete meal, serve the roasted cauliflower alongside grilled chicken or fish.
