Description

Ingredients

  • 1 medium head of cauliflower (about 2 to 3 pounds)
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup unsalted butter
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 425°F.
  2. Remove the leaves from the cauliflower and trim the stem so it can stand upright.
  3. In a small bowl, mix together the olive oil, salt, black pepper, garlic powder, paprika, and red pepper flakes (if using).
  4. Place the cauliflower on a baking sheet and brush the oil mixture all over the cauliflower, ensuring it is well coated.
  5. Roast the cauliflower in the preheated oven for 30-35 minutes, or until it is golden brown and tender when pierced with a fork.
  6. While the cauliflower is roasting, melt the butter in a small saucepan over medium heat. Once melted, remove from heat and stir in the lemon juice.
  7. Once the cauliflower is done, remove it from the oven and drizzle the butter sauce over the top.
  8. Garnish with chopped parsley before serving.

Notes

  • For a smoky flavor, try adding a teaspoon of smoked paprika instead of regular paprika.
