Ingredients
  

  • 1 pound ground beef
  • 2 medium zucchinis diced
  • 1 cup cooked rice white or brown
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 can 15 ounces diced tomatoes, drained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup feta cheese crumbled
  • 2 tablespoons olive oil
  • Fresh parsley chopped (for garnish)
  • Lemon wedges for serving

Method
 

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
  4. Stir in the diced zucchinis, drained diced tomatoes, oregano, basil, salt, and black pepper. Cook for another 5-6 minutes until the zucchinis are tender.
  5. In a serving bowl, layer the cooked rice, then top with the beef and zucchini mixture.
  6. Sprinkle crumbled feta cheese on top and garnish with fresh parsley. Serve with lemon wedges on the side for an extra burst of flavor.
