Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
Stir in the diced zucchinis, drained diced tomatoes, oregano, basil, salt, and black pepper. Cook for another 5-6 minutes until the zucchinis are tender.
In a serving bowl, layer the cooked rice, then top with the beef and zucchini mixture.
Sprinkle crumbled feta cheese on top and garnish with fresh parsley. Serve with lemon wedges on the side for an extra burst of flavor.
