- Preheat your oven to 400°F (200°C) and roll out the puff pastry until about 1/8-inch thick. Cut out 3-inch circles and place them on a parchment-lined baking sheet.
- Press a smaller cutter into the center of each circle to create indentations, then poke steam holes around the edges.
- Whisk together egg and a tablespoon of water to create an egg wash. Brush the edges of the pastry circles and refrigerate for 10 minutes.
- Bake the pastry circles for 8-10 minutes until lightly golden, then remove from oven.
- Deepen the indentations and add a dollop of jam into each indentation.
- Cut brie into small squares and place one in the center of each jam-filled indent.
- Return to the oven and bake for an additional 5-8 minutes until golden brown and brie is melted.
- Let cool for 5 minutes and garnish with fresh herbs before serving.
