Description

Yukon Gold Sweet Potato Au Gratin is a creamy and delicious dish made with layers of Yukon Gold and sweet potatoes, heavy cream, and a blend of cheeses.


Ingredients

  • 2 large Yukon Gold potatoes, thinly sliced (about 1.5 pounds)
  • 2 large sweet potatoes, thinly sliced (about 1.5 pounds)
  • 2 cups heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Gruyère cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon nutmeg
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • ½ cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F. Grease a 9×13-inch baking dish with butter or cooking spray.
  2. In a large bowl, combine the heavy cream, garlic powder, onion powder, salt, black pepper, nutmeg, and thyme. Whisk until well mixed.
  3. Layer half of the Yukon Gold potato slices in the bottom of the prepared baking dish. Pour half of the cream mixture over the potatoes, then sprinkle with half of the cheddar and Gruyère cheeses.
  4. Layer half of the sweet potato slices over the cheese, followed by the remaining cream mixture and the remaining cheeses. Finish with the remaining Yukon Gold and sweet potato slices on top.
  5. Sprinkle the grated Parmesan cheese evenly over the top layer. Cover the baking dish with aluminum foil and bake for 45 minutes.
  6. Remove the foil and bake for an additional 30 minutes, or until the potatoes are tender and the top is golden brown and bubbly.
  7. Let the dish cool for 10 minutes before serving.

Notes

  • For a lighter version, substitute half of the heavy cream with low-fat milk or unsweetened almond milk.
  • For added flavor, mix in some cooked crumbled bacon or sautéed onions between the layers.
