Zucchini Bagels are a delicious low-carb alternative to traditional bagels, made with grated zucchini and cheese, perfect for a healthy snack or breakfast.
Ingredients
- 2 medium zucchinis, grated (about 2 cups)
- 1 teaspoon salt
- 1 cup shredded mozzarella cheese
- 1/2 cup almond flour
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon baking powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 1 tablespoon sesame seeds (optional, for topping)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes to draw out moisture. After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove excess moisture.
- In a large mixing bowl, combine the drained zucchini, mozzarella cheese, almond flour, egg, garlic powder, onion powder, baking powder, oregano, and black pepper. Mix until well combined.
- Divide the mixture into 4 equal portions and shape each portion into a bagel shape on the prepared baking sheet, making a hole in the center.
- If desired, sprinkle sesame seeds on top of each bagel.
- Bake in the preheated oven for 20-25 minutes, or until the bagels are golden brown and firm to the touch.
- Allow the bagels to cool for a few minutes before serving.
Notes
- For added flavor, mix in some chopped fresh herbs like basil or chives into the dough.
- Substitute the mozzarella cheese with cheddar or pepper jack for a different taste profile.
