Description
Zucchini Bread Sandwiches are a delicious and unique twist on traditional sandwiches, made with grated zucchini and a blend of cheeses.
Ingredients
- 2 medium zucchinis, grated (about 2 cups)
- 1 teaspoon salt
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 2 large eggs
- 1/4 cup milk
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- 1/2 cup cooked and crumbled bacon (optional)
- Fresh basil leaves, for garnish
Instructions
- Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out excess moisture. Transfer to a large mixing bowl.
- Add salt to the zucchini and let it sit for about 10 minutes. This will help draw out more moisture. After 10 minutes, squeeze out any remaining liquid.
- In a separate bowl, whisk together the flour, baking powder, baking soda, garlic powder, onion powder, and black pepper.
- In another bowl, beat the eggs and then mix in the milk, Parmesan cheese, and mozzarella cheese.
- Combine the wet ingredients with the dry ingredients, then fold in the grated zucchini and bacon if using.
- Heat a non-stick skillet over medium heat and add olive oil. Pour about 1/4 cup of the batter into the skillet for each sandwich. Cook for 3-4 minutes on each side, or until golden brown and cooked through.
- Remove from the skillet and let cool slightly. Top one zucchini bread with fresh basil leaves and another zucchini bread to create a sandwich. Repeat with remaining batter.
Notes
- For a vegetarian option, omit the bacon and add chopped sun-dried tomatoes or olives for extra flavor.
- Serve with a side of marinara sauce for dipping or spread some pesto between the layers for added taste.
