Description

Zucchini Bread Sandwiches are a delicious and unique twist on traditional sandwiches, made with grated zucchini and a blend of cheeses.


Ingredients

  • 2 medium zucchinis, grated (about 2 cups)
  • 1 teaspoon salt
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1/4 cup milk
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 1/2 cup cooked and crumbled bacon (optional)
  • Fresh basil leaves, for garnish

Instructions

  1. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out excess moisture. Transfer to a large mixing bowl.
  2. Add salt to the zucchini and let it sit for about 10 minutes. This will help draw out more moisture. After 10 minutes, squeeze out any remaining liquid.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, garlic powder, onion powder, and black pepper.
  4. In another bowl, beat the eggs and then mix in the milk, Parmesan cheese, and mozzarella cheese.
  5. Combine the wet ingredients with the dry ingredients, then fold in the grated zucchini and bacon if using.
  6. Heat a non-stick skillet over medium heat and add olive oil. Pour about 1/4 cup of the batter into the skillet for each sandwich. Cook for 3-4 minutes on each side, or until golden brown and cooked through.
  7. Remove from the skillet and let cool slightly. Top one zucchini bread with fresh basil leaves and another zucchini bread to create a sandwich. Repeat with remaining batter.

Notes

  • For a vegetarian option, omit the bacon and add chopped sun-dried tomatoes or olives for extra flavor.
  • Serve with a side of marinara sauce for dipping or spread some pesto between the layers for added taste.
