Ingredients
- 2 cups grated zucchini (about 2 medium zucchinis, excess moisture squeezed out)
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup butterscotch chips
Instructions
- Preheat the oven to 350°F. Grease a 9×13-inch baking pan or line it with parchment paper for easy removal.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- In a large bowl, combine the melted butter, brown sugar, and granulated sugar. Mix until well combined. Add the eggs and vanilla extract, and stir until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the grated zucchini and butterscotch chips.
- Pour the batter into the prepared baking pan and spread it evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bars to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely. Cut into squares and serve.
