  • 2 cups grated zucchini (about 2 medium zucchinis, excess moisture squeezed out)

  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup butterscotch chips

Instructions

  1. Preheat the oven to 350°F. Grease a 9×13-inch baking pan or line it with parchment paper for easy removal.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In a large bowl, combine the melted butter, brown sugar, and granulated sugar. Mix until well combined. Add the eggs and vanilla extract, and stir until smooth.
