Description
A delicious and easy Zucchini Casserole with Ground Beef recipe that combines layers of zucchini, ground beef, and cheese for a hearty meal.
Ingredients
- 2 medium zucchinis, sliced
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes, drained
- 1 cup shredded cheddar cheese
- 1 cup breadcrumbs
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat.
- Stir in the drained diced tomatoes, sliced zucchinis, Italian seasoning, salt, and black pepper. Cook for an additional 5 minutes until the zucchinis are slightly tender.
- In a 9×13-inch baking dish, layer half of the beef and zucchini mixture. Sprinkle half of the breadcrumbs and half of the cheddar cheese on top. Repeat the layers with the remaining mixture, breadcrumbs, and cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Remove from the oven and let it cool for 5 minutes. Garnish with fresh parsley before serving.
Notes
- For a healthier version, substitute ground turkey or chicken for the ground beef.
- Add a layer of cooked rice or quinoa for extra texture and heartiness.
