Description
Zucchini Cheddar Crisps are a delicious and crunchy snack made with grated zucchini and a blend of cheeses, perfect for a healthy appetizer or side dish.
Ingredients
- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1 cup cottage cheese
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1 large egg
- 1/2 cup breadcrumbs (or almond flour for a low-carb option)
- Cooking spray or olive oil for greasing
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Lightly grease the parchment with cooking spray or olive oil.
- In a large bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes to draw out excess moisture. After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove as much liquid as possible.
- In the same bowl, add the cottage cheese, cheddar cheese, Parmesan cheese, garlic powder, onion powder, black pepper, paprika, egg, and breadcrumbs. Mix until well combined.
- Using a tablespoon, scoop the mixture onto the prepared baking sheet, forming small mounds. Flatten each mound slightly with the back of the spoon.
- Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and crispy.
- Remove from the oven and let cool for a few minutes before serving. Enjoy warm or at room temperature.
Notes
- For a spicier kick, add 1/4 teaspoon of cayenne pepper or red pepper flakes to the mixture.
