A simple and delicious recipe for crispy zucchini cheese snacks that are perfect for a healthy appetizer or snack.
Ingredients
- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes to draw out excess moisture.
- After 10 minutes, use a clean kitchen towel or cheesecloth to squeeze out as much liquid as possible from the zucchini.
- Add the mozzarella cheese, Parmesan cheese, garlic powder, black pepper, and red pepper flakes (if using) to the drained zucchini. Mix everything together until well combined.
- Using a tablespoon, scoop out the mixture and form small mounds on the prepared baking sheet, spacing them about 2 inches apart. Flatten each mound slightly with the back of the spoon.
- Drizzle olive oil over the tops of the zucchini mounds for added flavor and crispiness.
- Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and crispy.
- Remove from the oven and let cool for a few minutes before serving. Enjoy your crispy snacks!
Notes
- For a twist, try adding chopped fresh herbs like basil or oregano to the mixture for extra flavor.
- You can also substitute the mozzarella with cheddar cheese for a different taste.
