Description

Zucchini and Cheese Roll-Ups are a delicious and easy recipe that combines fresh zucchini with a creamy cheese filling, baked to perfection.


Ingredients

  • 2 medium zucchinis, thinly sliced lengthwise
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the ricotta cheese, mozzarella cheese, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.
  3. Lay the zucchini slices on a clean surface. Spoon about 1 tablespoon of the cheese mixture onto one end of each zucchini slice.
  4. Roll the zucchini slice tightly around the cheese mixture, starting from the end with the filling. Place the roll-up seam side down in a baking dish.
  5. Repeat with the remaining zucchini slices and cheese mixture until all are rolled and placed in the dish.
  6. Pour the marinara sauce evenly over the zucchini roll-ups.
  7. Cover the baking dish with aluminum foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  9. Let cool for a few minutes before serving. Garnish with fresh basil leaves if desired.
