Description
Zucchini and Cheese Roll-Ups are a delicious and easy recipe that combines fresh zucchini with a creamy cheese filling, baked to perfection.
Ingredients
- 2 medium zucchinis, thinly sliced lengthwise
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup marinara sauce
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the ricotta cheese, mozzarella cheese, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.
- Lay the zucchini slices on a clean surface. Spoon about 1 tablespoon of the cheese mixture onto one end of each zucchini slice.
- Roll the zucchini slice tightly around the cheese mixture, starting from the end with the filling. Place the roll-up seam side down in a baking dish.
- Repeat with the remaining zucchini slices and cheese mixture until all are rolled and placed in the dish.
- Pour the marinara sauce evenly over the zucchini roll-ups.
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Let cool for a few minutes before serving. Garnish with fresh basil leaves if desired.
Notes
- For a spicier kick, add crushed red pepper flakes to the cheese mixture.
- Substitute the ricotta with cottage cheese for a lower-fat option.
