Description
Delicious and healthy Zucchini Cottage Cheese Spring Rolls made in the air fryer, perfect for a light meal or appetizer.
Ingredients
- 2 medium zucchinis, thinly sliced lengthwise
- 1 cup cottage cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/2 cup breadcrumbs (panko or regular)
- Cooking spray
Instructions
- Preheat the air fryer to 375°F (190°C).
- In a mixing bowl, combine the cottage cheese, mozzarella cheese, Parmesan cheese, basil, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Lay out the zucchini slices on a clean surface. Place about 1 tablespoon of the cheese mixture at one end of each zucchini slice.
- Roll the zucchini slice tightly around the cheese mixture, creating a spring roll shape. Secure with a toothpick if necessary.
- In a shallow dish, spread the breadcrumbs. Lightly coat each spring roll with olive oil and then roll in the breadcrumbs until fully coated.
- Arrange the spring rolls in a single layer in the air fryer basket. Spray lightly with cooking spray.
- Cook in the air fryer for 10-12 minutes, or until golden brown and crispy, flipping halfway through for even cooking.
- Remove from the air fryer and let cool for a few minutes before serving.
Notes
- For added flavor, try mixing in some chopped sun-dried tomatoes or spinach into the cheese mixture.
- Serve with a dipping sauce such as marinara or a yogurt-based dip for extra taste.
