Description
Zucchini Crust Grilled Cheese Squares are a delicious and healthy twist on traditional grilled cheese, featuring a crust made from grated zucchini.
Ingredients
- 1 medium zucchini, grated
- 1 teaspoon salt
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
- Butter or olive oil for grilling
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes to draw out moisture. After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove excess water.
- In a large mixing bowl, combine the squeezed zucchini, mozzarella cheese, Parmesan cheese, egg, garlic powder, oregano, and black pepper. Mix until well combined.
- Spread the zucchini mixture evenly onto the prepared baking sheet, forming a rectangle about 1/4 inch thick.
- Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown.
- Remove from the oven and let it cool for a few minutes. Cut the baked zucchini crust into squares.
- Heat a skillet over medium heat and add a little butter or olive oil. Place a zucchini square in the skillet, top with shredded cheddar cheese, and add another zucchini square on top. Grill for 2-3 minutes on each side, or until the cheese is melted and the crust is crispy.
- Repeat with the remaining squares. Serve warm.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the zucchini mixture.
- You can also substitute the cheddar cheese with pepper jack for a different flavor profile.
