Description

Zucchini Crust Grilled Cheese Squares are a delicious and healthy twist on traditional grilled cheese, featuring a crust made from grated zucchini.


Ingredients

  • 1 medium zucchini, grated
  • 1 teaspoon salt
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • Butter or olive oil for grilling

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes to draw out moisture. After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove excess water.
  3. In a large mixing bowl, combine the squeezed zucchini, mozzarella cheese, Parmesan cheese, egg, garlic powder, oregano, and black pepper. Mix until well combined.
  4. Spread the zucchini mixture evenly onto the prepared baking sheet, forming a rectangle about 1/4 inch thick.
  5. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown.
  6. Remove from the oven and let it cool for a few minutes. Cut the baked zucchini crust into squares.
  7. Heat a skillet over medium heat and add a little butter or olive oil. Place a zucchini square in the skillet, top with shredded cheddar cheese, and add another zucchini square on top. Grill for 2-3 minutes on each side, or until the cheese is melted and the crust is crispy.
  8. Repeat with the remaining squares. Serve warm.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the zucchini mixture.
  • You can also substitute the cheddar cheese with pepper jack for a different flavor profile.
