Ingredients
- 2 medium zucchinis, sliced (about 4 cups)
- 1 medium onion, chopped
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 cup breadcrumbs
- 2 large eggs
- 2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
- In a large bowl, combine the sliced zucchinis, chopped onion, shredded cheddar cheese, sour cream, breadcrumbs, eggs, dill, garlic powder, salt, and pepper. Mix well until all ingredients are evenly combined.
- Pour the mixture into the prepared baking dish, spreading it out evenly.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is set.
- Remove from the oven and let it cool for about 5-10 minutes before serving.
Notes
- For a healthier option, substitute half of the cheddar cheese with a low-fat cheese or use whole wheat breadcrumbs.
- Add cooked ground turkey or sausage for added protein and flavor.
