A quick and delicious Zucchini Feta Dill Bake that combines fresh zucchini, creamy cheeses, and aromatic dill for a flavorful dish.
Ingredients
- 2 medium zucchinis, grated
- 1 cup cottage cheese
- 1 cup crumbled feta cheese
- 1/4 cup fresh dill, chopped (or 1 tablespoon dried dill)
- 2 large eggs
- 1/2 cup breadcrumbs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/4 cup grated Parmesan cheese (optional, for topping)
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×9-inch baking dish with olive oil.
- In a large mixing bowl, combine the grated zucchini, cottage cheese, feta cheese, and fresh dill. Mix well.
- In a separate bowl, whisk together the eggs, garlic powder, onion powder, salt, and black pepper. Add this mixture to the zucchini mixture and stir until fully combined.
- Fold in the breadcrumbs until evenly distributed throughout the mixture.
- Pour the mixture into the prepared baking dish and spread it out evenly. If desired, sprinkle the grated Parmesan cheese on top.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the edges are set.
- Let the bake cool for about 5 minutes before slicing and serving.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the mixture.
- You can substitute the zucchini with yellow squash or a mix of both for added color and flavor.
