Ingredients

  • 2 medium zucchinis, grated
  • 1 cup cottage cheese
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh dill, chopped (or 1 tablespoon dried dill)
  • 2 large eggs
  • 1/2 cup breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 cup grated Parmesan cheese (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×9-inch baking dish with olive oil.
  2. In a large mixing bowl, combine the grated zucchini, cottage cheese, feta cheese, and fresh dill. Mix well.
  3. In a separate bowl, whisk together the eggs, garlic powder, onion powder, salt, and black pepper. Add this mixture to the zucchini mixture and stir until fully combined.
  4. Fold in the breadcrumbs until evenly distributed throughout the mixture.
