Ingredients

  • 2 medium zucchinis, grated (about 2 cups)
  • 1 teaspoon salt
  • 1 large egg
  • 1 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)
  • Vegetable oil for frying

Instructions

  1. Start by grating the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture.
  2. In a large mixing bowl, combine the drained zucchini, salt, egg, flour, garlic powder, black pepper, and Parmesan cheese (if using). Mix until well combined.
  3. Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
  4. Once the oil is hot, drop spoonfuls of the zucchini mixture into the skillet, flattening them slightly with the back of the spoon. Cook for about 3-4 minutes on each side or until golden brown and crispy.
  5. Remove the fritters from the skillet and place them on a paper towel-lined plate to absorb excess oil. Repeat with the remaining mixture.
  6. Serve warm, garnished with sour cream or yogurt if desired.
