Ingredients
- 2 medium zucchinis, grated (about 2 cups)
- 1 teaspoon salt
- 1 large egg
- 1 cup all-purpose flour
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese (optional)
- Vegetable oil for frying
Instructions
- Start by grating the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture.
- In a large mixing bowl, combine the drained zucchini, salt, egg, flour, garlic powder, black pepper, and Parmesan cheese (if using). Mix until well combined.
- Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
- Once the oil is hot, drop spoonfuls of the zucchini mixture into the skillet, flattening them slightly with the back of the spoon. Cook for about 3-4 minutes on each side or until golden brown and crispy.
- Remove the fritters from the skillet and place them on a paper towel-lined plate to absorb excess oil. Repeat with the remaining mixture.
- Serve warm, garnished with sour cream or yogurt if desired.
Notes
- For extra flavor, add chopped fresh herbs like parsley or dill to the batter.
- To make these fritters gluten-free, substitute all-purpose flour with almond flour or a gluten-free flour blend.
