Description

Zucchini Garlic Bites are a delicious and easy-to-make appetizer or snack that combines grated zucchini with garlic and Parmesan cheese, fried to golden perfection.


Ingredients

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 3 cloves garlic, minced
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil (for frying)

Instructions

  1. In a large bowl, combine the grated zucchinis and salt. Let sit for 10 minutes to draw out moisture. After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove excess moisture.
  2. In the same bowl, add the flour, Parmesan cheese, eggs, minced garlic, black pepper, red pepper flakes (if using), and parsley. Mix until well combined.
  3. Heat olive oil in a large skillet over medium heat.
  4. Using a tablespoon, scoop the zucchini mixture and drop it into the hot oil, flattening each scoop slightly to form a patty. Fry for about 3-4 minutes on each side or until golden brown.
  5. Remove the bites from the skillet and place them on a paper towel-lined plate to drain excess oil.
  6. Serve warm with your favorite dipping sauce.
