Zucchini Garlic Bites are a delicious and easy-to-make appetizer or snack that combines grated zucchini with garlic and Parmesan cheese, fried to golden perfection.
Ingredients
- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 3 cloves garlic, minced
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil (for frying)
Instructions
- In a large bowl, combine the grated zucchinis and salt. Let sit for 10 minutes to draw out moisture. After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove excess moisture.
- In the same bowl, add the flour, Parmesan cheese, eggs, minced garlic, black pepper, red pepper flakes (if using), and parsley. Mix until well combined.
- Heat olive oil in a large skillet over medium heat.
- Using a tablespoon, scoop the zucchini mixture and drop it into the hot oil, flattening each scoop slightly to form a patty. Fry for about 3-4 minutes on each side or until golden brown.
- Remove the bites from the skillet and place them on a paper towel-lined plate to drain excess oil.
- Serve warm with your favorite dipping sauce.
Notes
- For a gluten-free option, substitute all-purpose flour with almond flour or a gluten-free flour blend.
- Add shredded carrots or chopped spinach to the mixture for extra flavor and nutrition.
