Ingredients

  • 2 medium zucchinis, sliced into 1/4-inch rounds
  • 8 ounces goat cheese, softened
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon balsamic vinegar
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine the olive oil, balsamic vinegar, salt, and pepper. Add the zucchini slices and toss to coat evenly.
  3. Arrange the zucchini slices in a single layer on a baking sheet lined with parchment paper. Roast in the oven for about 15 minutes, or until tender and slightly golden.
  4. While the zucchini is roasting, mix the goat cheese with the chopped basil in a small bowl until well combined.
  5. Once the zucchini is done, remove it from the oven and let it cool slightly.
  6. On a serving platter, layer the zucchini slices, spreading a small amount of the goat cheese mixture between each slice.
  7. Top the stack with halved cherry tomatoes and sprinkle with grated Parmesan cheese.
  8. Drizzle with any remaining olive oil mixture and serve warm or at room temperature.
