Description
A unique and sweet jam made from zucchini, perfect for spreading on toast or using in desserts.
Ingredients
- 2 cups grated zucchini (about 2 medium zucchinis)
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1/4 cup lemon juice (freshly squeezed)
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 package (1.75 oz) fruit pectin (such as Sure-Jell)
Instructions
- In a large mixing bowl, combine the grated zucchini, granulated sugar, brown sugar, lemon juice, vanilla extract, cinnamon, nutmeg, and salt. Stir well to combine and let sit for 30 minutes.
- Transfer the mixture to a large saucepan and heat over medium heat, stirring frequently until it comes to a boil.
- Once boiling, add the fruit pectin and continue to boil for 1 minute, stirring constantly.
- Remove the saucepan from heat and let the mixture cool for about 5 minutes. Stir again to ensure even distribution of ingredients.
- Pour the jam into sterilized jars, leaving about 1/4 inch of headspace at the top. Seal the jars with lids and allow them to cool to room temperature before refrigerating.
- For longer storage, process the jars in a boiling water bath for 10 minutes.
Notes
- For a spicier kick, add 1/4 teaspoon of ground ginger to the mixture before boiling.
- Try substituting half of the zucchini with grated carrots for a different flavor profile and added color.
