Description
A healthy and delicious stir-fry made with zucchini noodles and a variety of colorful vegetables.
Ingredients
- 2 medium zucchinis, spiralized into noodles
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 cup snap peas
- 1 carrot, julienned
- 3 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
- Sesame seeds (for garnish)
Instructions
- Heat the olive oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
- Add the sliced red bell pepper, snap peas, and julienned carrot to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Add the spiralized zucchini noodles to the skillet, along with the soy sauce and sesame oil. Toss everything together and cook for an additional 2-3 minutes until the zucchini noodles are heated through but still slightly firm.
- Season with salt and pepper to taste.
- Remove from heat and garnish with sliced green onions and sesame seeds before serving.
Notes
- For added protein, consider adding cooked chicken, shrimp, or tofu to the stir-fry.
- Experiment with different vegetables such as broccoli, mushrooms, or baby corn for a unique twist.
