Description

A delicious and savory Zucchini Onion Pie that combines fresh zucchini and onion with cheese and spices, perfect for a light meal or side dish.

Ingredients

  • 2 medium zucchinis, grated (about 3 cups)
  • 1 medium onion, finely chopped
  • 1 cup shredded cheddar cheese
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 large eggs
  • 1/4 cup vegetable oil
  • 1/4 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch pie dish or a similar baking dish.
  2. In a large bowl, combine the grated zucchini and chopped onion. Let it sit for about 10 minutes, then squeeze out excess moisture using a clean kitchen towel or cheesecloth.
  3. In another bowl, mix together the flour, baking powder, salt, black pepper, garlic powder, and dried oregano.
  4. In a separate bowl, whisk together the eggs, vegetable oil, and milk until well combined.
  5. Add the egg mixture to the dry ingredients and stir until just combined. Fold in the squeezed zucchini, onion, and shredded cheddar cheese until evenly distributed.
  6. Pour the mixture into the prepared pie dish and spread it out evenly.
  7. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Allow the pie to cool for about 10 minutes before slicing and serving.

Notes

  • For added flavor, consider mixing in some cooked bacon or diced ham before baking.
  • You can substitute the cheddar cheese with feta or mozzarella for a different taste profile.
