Ingredients
- 2 medium zucchinis, grated (about 3 cups)
- 1 medium onion, finely chopped
- 1 cup shredded cheddar cheese

- 1 teaspoon baking powder

- 1/2 teaspoon black pepper
- 3 large eggs
- 1/4 cup vegetable oil
- 1/4 cup milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch pie dish or a similar baking dish.
- In a large bowl, combine the grated zucchini and chopped onion. Let it sit for about 10 minutes, then squeeze out excess moisture using a clean kitchen towel or cheesecloth.
- In another bowl, mix together the flour, baking powder, salt, black pepper, garlic powder, and dried oregano.
- In a separate bowl, whisk together the eggs, vegetable oil, and milk until well combined.
- Add the egg mixture to the dry ingredients and stir until just combined. Fold in the squeezed zucchini, onion, and shredded cheddar cheese until evenly distributed.
- Pour the mixture into the prepared pie dish and spread it out evenly.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Allow the pie to cool for about 10 minutes before slicing and serving.
