Description

Zucchini Parmesan Cups are a delicious and healthy appetizer made with zucchini rounds topped with a cheesy mixture and baked to perfection.


Ingredients

  • 2 medium zucchinis, sliced into 1/4-inch rounds
  • 1 cup cottage cheese
  • 1 cup shredded Parmesan cheese
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup breadcrumbs
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the cottage cheese, Parmesan cheese, egg, garlic powder, oregano, salt, and black pepper. Mix well until all ingredients are fully incorporated.
  3. Place the zucchini rounds on the prepared baking sheet. Brush both sides lightly with olive oil.
  4. Spoon the cheese mixture onto each zucchini round, spreading it evenly.
  5. Sprinkle breadcrumbs on top of each filled zucchini round for added crunch.
  6. Bake in the preheated oven for 20-25 minutes, or until the tops are golden and the zucchini is tender.
  7. Remove from the oven and let cool for a few minutes. Garnish with chopped parsley before serving.
