Description
Zucchini Parmesan Cups are a delicious and healthy appetizer made with zucchini rounds topped with a cheesy mixture and baked to perfection.
Ingredients
- 2 medium zucchinis, sliced into 1/4-inch rounds
- 1 cup cottage cheese
- 1 cup shredded Parmesan cheese
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup breadcrumbs
- 1 tablespoon olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the cottage cheese, Parmesan cheese, egg, garlic powder, oregano, salt, and black pepper. Mix well until all ingredients are fully incorporated.
- Place the zucchini rounds on the prepared baking sheet. Brush both sides lightly with olive oil.
- Spoon the cheese mixture onto each zucchini round, spreading it evenly.
- Sprinkle breadcrumbs on top of each filled zucchini round for added crunch.
- Bake in the preheated oven for 20-25 minutes, or until the tops are golden and the zucchini is tender.
- Remove from the oven and let cool for a few minutes. Garnish with chopped parsley before serving.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the cheese mixture.
- Substitute the cottage cheese with ricotta for a creamier texture.
