Description
Zucchini Pasta Delight is a fresh and healthy twist on traditional pasta, featuring spiralized zucchini and cherry tomatoes, perfect for a light dinner.
Ingredients
- 2 medium zucchinis, spiralized or sliced into thin strips
- 8 ounces of spaghetti or your favorite pasta
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
- Fresh basil leaves for garnish
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the cherry tomatoes and red pepper flakes to the skillet. Cook for 3-4 minutes until the tomatoes start to soften.
- Stir in the spiralized zucchini and cook for an additional 2-3 minutes until the zucchini is tender but still slightly crisp.
- Add the cooked pasta to the skillet, tossing everything together. If the mixture seems dry, add a little reserved pasta water to reach your desired consistency. Season with salt and pepper to taste.
- Remove from heat and sprinkle with grated Parmesan cheese if using. Toss to combine.
- Serve immediately, garnished with fresh basil leaves.
