Description

Zucchini Pasta Delight is a fresh and healthy twist on traditional pasta, featuring spiralized zucchini and cherry tomatoes, perfect for a light dinner.


Ingredients

  • 2 medium zucchinis, spiralized or sliced into thin strips
  • 8 ounces of spaghetti or your favorite pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh basil leaves for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the cherry tomatoes and red pepper flakes to the skillet. Cook for 3-4 minutes until the tomatoes start to soften.
  4. Stir in the spiralized zucchini and cook for an additional 2-3 minutes until the zucchini is tender but still slightly crisp.
  5. Add the cooked pasta to the skillet, tossing everything together. If the mixture seems dry, add a little reserved pasta water to reach your desired consistency. Season with salt and pepper to taste.
  6. Remove from heat and sprinkle with grated Parmesan cheese if using. Toss to combine.
  7. Serve immediately, garnished with fresh basil leaves.
