Ingredients

  • 2 medium zucchinis, grated (about 4 cups)
  • 1 teaspoon salt
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 3 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley (optional)
  • 1/4 cup olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9-inch pie dish.
  2. In a large bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes to draw out excess moisture. After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove as much liquid as possible.
  3. In another bowl, whisk together the flour, baking powder, black pepper, garlic powder, and onion powder.
  4. In a separate bowl, beat the eggs and then stir in the olive oil, cheddar cheese, Parmesan cheese, and parsley if using.
  5. Add the squeezed zucchini to the egg mixture and mix well. Gradually fold in the dry ingredients until just combined.
  6. Pour the mixture into the prepared pie dish and spread it evenly.
  7. Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Allow the pie to cool for about 10 minutes before slicing and serving.
