Delicious and crispy zucchini ricotta fritters that are easy to make and perfect for a snack or appetizer.
Ingredients
- 2 medium zucchinis, grated (about 2 cups)
- 1 teaspoon salt
- 1 cup ricotta cheese
- 1 large egg
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 cup chopped fresh parsley (optional)
- 1/4 cup olive oil (for frying)
Instructions
- Place the grated zucchini in a colander and sprinkle with salt. Let it sit for about 15 minutes to draw out excess moisture. After 15 minutes, squeeze the zucchini with your hands to remove as much liquid as possible.
- In a large mixing bowl, combine the drained zucchini, ricotta cheese, egg, flour, Parmesan cheese, black pepper, garlic powder, onion powder, and parsley (if using). Mix until well combined.
- Heat olive oil in a large skillet over medium heat.
- Once the oil is hot, drop spoonfuls of the zucchini mixture into the skillet, flattening them slightly with the back of the spoon. Cook for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
- Serve warm, with a dollop of sour cream or yogurt if desired.
Notes
- For a gluten-free option, substitute all-purpose flour with almond flour or a gluten-free flour blend.
- Add spices like cayenne pepper or smoked paprika for an extra kick of flavor.
