Delicious zucchini roll-ups filled with a creamy cheese mixture, perfect as an appetizer or snack.
Ingredients
- 2 medium zucchinis
- 8 ounces cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh basil (optional)
- 1/4 cup marinara sauce (for serving)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Slice the zucchinis lengthwise into thin strips, about 1/8 inch thick. You can use a mandoline or a sharp knife for even slices.
- Place the zucchini strips on the prepared baking sheet and sprinkle with a little salt. Bake for 10-12 minutes until slightly tender. Remove from the oven and let cool.
- In a medium bowl, mix the softened cream cheese, grated Parmesan cheese, garlic powder, dried oregano, salt, and black pepper until well combined. If using, fold in the chopped fresh basil.
- Once the zucchini strips have cooled, spread about 1 tablespoon of the cream cheese mixture onto each strip. Roll them up tightly and place seam-side down on the baking sheet.
- Return the zucchini roll-ups to the oven and bake for an additional 10 minutes until heated through.
- Serve warm with marinara sauce for dipping.
Notes
- For a spicy kick, add red pepper flakes to the cream cheese mixture.
- Substitute the cream cheese with ricotta or goat cheese for a different flavor profile.
