Description

Delicious zucchini roll-ups filled with a creamy cheese mixture, perfect as an appetizer or snack.


Ingredients

  • 2 medium zucchinis
  • 8 ounces cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh basil (optional)
  • 1/4 cup marinara sauce (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Slice the zucchinis lengthwise into thin strips, about 1/8 inch thick. You can use a mandoline or a sharp knife for even slices.
  3. Place the zucchini strips on the prepared baking sheet and sprinkle with a little salt. Bake for 10-12 minutes until slightly tender. Remove from the oven and let cool.
  4. In a medium bowl, mix the softened cream cheese, grated Parmesan cheese, garlic powder, dried oregano, salt, and black pepper until well combined. If using, fold in the chopped fresh basil.
  5. Once the zucchini strips have cooled, spread about 1 tablespoon of the cream cheese mixture onto each strip. Roll them up tightly and place seam-side down on the baking sheet.
  6. Return the zucchini roll-ups to the oven and bake for an additional 10 minutes until heated through.
  7. Serve warm with marinara sauce for dipping.
