Ingredients
- 1 kg (2 lbs) zucchini, grated
- 1 cup brown onion, finely diced
- 2 garlic cloves, minced
- 3 tablespoons olive oil (divided)
- 2 1/2 cups warm liquid (zucchini juices + milk)
- 2/3 cup parmesan cheese, grated (reserve 2 tablespoons for topping)
- 1/2 cup medium grain white rice, uncooked
- 2 tablespoons flour
- 2 teaspoons salt
- Black pepper to taste
Instructions
- Prepare the Zucchini:
- Grate the zucchini and place it in a large bowl.
- Sprinkle with 2 teaspoons of salt and mix well.
- Transfer to a colander set over a bowl and let sit for 20 minutes to release juices.
- Squeeze out as much liquid as possible and reserve the liquid for later. Rinse the zucchini briefly under cold water, squeeze again, and pat dry with paper towels.
- Create the Flavor Base:
- Heat 2 tablespoons olive oil in a large pan over medium heat.
- Sauté the minced garlic and diced onion for 8 minutes until translucent and golden.
- Add the grated zucchini and cook for 5 minutes, stirring frequently.
- Build the Dish:
- Sprinkle flour over the zucchini mixture and cook for 2 minutes, stirring constantly.
- Remove from heat and stir in all but 2 tablespoons of the parmesan cheese.
- Season with additional salt and black pepper to taste.
- Add Rice and Liquid:
- Combine the reserved zucchini juices with enough milk to make 2 1/2 cups of warm liquid.
- Stir the uncooked rice and the liquid into the zucchini mixture.
- Bake the Tian:
- Preheat your oven to 220°C (425°F).
- Return the pan to heat and bring the mixture to a simmer.
- If your pan isn’t ovenproof, transfer the mixture to a buttered baking dish.
- Sprinkle the remaining parmesan cheese on top and drizzle with 1 tablespoon olive oil.
- Cover with a lid or foil and bake for 15 minutes.
- Remove the cover and bake for another 10–15 minutes, until the top is golden and the liquid is absorbed.
- Let It Rest:
- Allow the Zucchini Tian to rest for 10 minutes before serving. This helps the flavors meld and the texture set.
