Ingredients

  • 2 cups all-purpose flour

  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 cups grated zucchini (about 2 medium zucchinis)
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts
  • 1/2 cup powdered sugar (for glaze, optional)
  • 2 tablespoons milk (for glaze, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. In a large mixing bowl, combine the granulated sugar, brown sugar, and vegetable oil. Mix until well combined.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the grated zucchini and vanilla extract.
