Description

Air Fryer Cottage Cheese & Veggie Frittata Cups are a delicious and easy-to-make dish, perfect for breakfast or a healthy snack.

Ingredients

  • 4 large eggs
  • 1/2 cup cottage cheese
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup finely diced red bell pepper
  • 1/4 cup chopped fresh spinach
  • 2 tablespoons finely chopped onion
  • 2 tablespoons milk
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt, or to taste
  • Cooking spray

Instructions

  1. Preheat the air fryer to 300°F for about 3 minutes, following your air fryer manufacturer’s instructions.
  2. Finely dice the bell pepper and onion. Chop the spinach into small pieces. If the vegetables are wet, pat them dry with paper towels.
  3. In a medium bowl, whisk together the eggs, cottage cheese, milk, garlic powder, salt, and black pepper until well combined.
  4. Stir in the bell pepper, spinach, onion, and shredded cheddar.
  5. Lightly grease six small silicone muffin cups or air-fryer-safe ramekins with cooking spray. Divide the egg mixture evenly among them, filling each about three-quarters full.
  6. Arrange the cups in the air fryer basket, leaving space for air to circulate. Cook at 300°F for 10–15 minutes, checking toward the end.
  7. Let the frittata cups rest for 2–3 minutes before carefully removing them from their molds.
  8. Enjoy warm with fresh fruit, whole-grain toast, or a simple side salad.

Notes

  • Don’t overfill: Leave room at the top because the eggs puff up while cooking.
  • Keep vegetables finely chopped: Smaller pieces distribute evenly and cook more reliably.
  • Avoid excess moisture: Watery vegetables can make the centers soggy.
  • Check your air fryer early: Cooking time varies by appliance and cup size.
  • Use silicone cups or suitable ramekins: Make sure they are heat-safe and fit comfortably in your air fryer.
