Ingredients

  • 2 cups (250 g) all-purpose flour
  • 2 cups (400 g) granulated sugar
  • 2 teaspoons (8 g) baking soda
  • 1 teaspoon (5 g) baking powder
  • 1 teaspoon (3 g) ground cinnamon
  • ½ teaspoon (3 g) salt
  • 1½ cups (360 ml) vegetable oil
  • 4 large eggs
  • 2 teaspoons (10 ml) vanilla extract
  • 3 cups (300 g) finely grated carrots
  • 1 cup (120 g) chopped pecans or walnuts
  • 1 cup (165 g) crushed pineapple, well drained
  • 8 oz (225 g) cream cheese, softened
  • ½ cup (113 g) unsalted butter, softened
  • 3 cups (360 g) powdered sugar
  • 1 teaspoon (5 ml) vanilla extract
  • 12 tablespoons (15–30 ml) milk, if needed

Instructions

  1. Preheat oven: Heat to 175°C (350°F). Grease and line a 9 × 13-inch (23 × 33 cm) baking pan.
  2. Combine dry ingredients: Whisk together flour, sugar, baking soda, baking powder, cinnamon, and salt.
  3. Add wet ingredients: Beat in the oil, eggs, and vanilla until well combined.
  4. Fold in: Gently fold in the grated carrots, crushed pineapple, and chopped nuts.
  5. Bake: Pour into the prepared pan and bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool completely before frosting.
  7. Make the frosting: Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla. Beat until fluffy. Add milk a little at a time if the frosting is too thick.
  8. Frost: Spread evenly over the cooled cake.
  9. Serve: Sprinkle with extra chopped pecans or walnuts if desired.
