Description
A delicious and creamy Amish Peanut Butter Cream Pie with a crunchy peanut butter crumble topping.
Ingredients
- 1 refrigerated 9-inch pie crust
- 1 tbsp granulated sugar, optional
- ½ cup creamy peanut butter
- ½ cup powdered sugar
- ½ cup granulated sugar
- ¼ cup cornstarch
- ¼ tsp salt
- 2 cups whole milk
- 3 large egg yolks
- 2 tbsp unsalted butter
- 2 tsp vanilla extract
- 1 cup heavy whipping cream
- ¼ cup powdered sugar
- 1 tsp vanilla extract
- 2 tbsp finely chopped peanuts, optional
Instructions
- Preheat oven to 375°F. Place the pie crust in a 9-inch pie dish, crimp the edges, and prick the bottom several times with a fork. Bake for 12–15 minutes, or until lightly golden. Let cool completely.
- In a small bowl, mix the peanut butter and powdered sugar with a fork until coarse crumbs form. Set aside.
- In a medium saucepan, whisk together the sugar, cornstarch, and salt. Slowly whisk in the milk until smooth. Cook over medium heat, whisking constantly, until the mixture thickens and begins to bubble.
- In a separate bowl, lightly whisk the egg yolks. Slowly pour about ½ cup of the hot milk mixture into the yolks while whisking constantly to temper them. Pour the egg mixture back into the saucepan. Cook for another 1–2 minutes, stirring constantly, until thick and smooth.
- Remove from the heat and stir in the butter and vanilla.
- Sprinkle about half of the peanut butter crumbs over the bottom of the cooled crust. Pour the warm cream filling over the crumbs and smooth the top. Sprinkle the remaining peanut butter crumbs over the cream filling.
- Cover loosely and refrigerate for at least 4 hours, preferably overnight, until completely set.
- Beat the heavy cream, powdered sugar, and vanilla until stiff peaks form. Spread or pipe the whipped cream over the chilled pie. Sprinkle with chopped peanuts and a few extra peanut butter crumbs if desired.
- Slice chilled and serve immediately.
Notes
- For the cleanest slices, chill the pie overnight and use a sharp knife warmed under hot water and dried before each cut.
