Description
These Anti-Inflammatory High-Protein Oven-Baked Cabbage Burgers are a healthy and delicious alternative to traditional burgers, packed with flavor and nutrients.
Ingredients
- 1 medium green cabbage
- 1 pound lean ground turkey or lean ground beef
- 1 large egg
- ½ cup finely chopped onion
- 3 cloves garlic, minced
- 1 teaspoon freshly grated ginger
- 1 teaspoon ground turmeric
- 1 teaspoon smoked paprika
- ½ teaspoon ground black pepper
- 1 teaspoon dried oregano
- ½ teaspoon salt, or to taste
- 2 tablespoons olive oil
- ¼ cup chopped fresh parsley
- ½ cup shredded mozzarella cheese, optional
- ½ cup plain Greek yogurt (for sauce)
- 1 tablespoon fresh lemon juice (for sauce)
- 1 small garlic clove, minced (for sauce)
- 1 tablespoon chopped fresh parsley (for sauce)
- Pinch of black pepper (for sauce)
- Salt to taste (for sauce)
Instructions
- Preheat the oven to 400°F. Line a large baking sheet with parchment paper or lightly grease it with olive oil.
- Remove any damaged outer leaves from the cabbage. Cut it into thick slices, approximately ½–¾ inch thick. Arrange the slices on the prepared baking sheet and brush lightly with olive oil. Reserve a little oil for the tops.
- In a large bowl, combine the ground turkey or beef, egg, chopped onion, garlic, ginger, turmeric, smoked paprika, black pepper, oregano, salt, and parsley. Mix gently until the ingredients are evenly distributed.
- Divide the meat mixture into four equal portions and shape them into patties. Place one patty on each cabbage slice, pressing gently so it sits securely. Brush the exposed cabbage edges with the remaining olive oil.
- Bake for 25–35 minutes, depending on the thickness of the patties and the type of meat. Ground turkey should reach an internal temperature of 165°F, while ground beef should reach at least 160°F.
- If using mozzarella, sprinkle it over the patties during the final 3–5 minutes of baking. Return the tray to the oven until the cheese melts and the cabbage is tender.
- While the burgers bake, mix the Greek yogurt, lemon juice, minced garlic, parsley, black pepper, and salt in a small bowl. Stir until smooth and refrigerate until ready to serve.
- Allow the cabbage burgers to rest for a few minutes. Serve warm with the yogurt sauce and your favorite vegetable side dishes.
Notes
