Description
A delicious and healthy Anti-Inflammatory Zucchini Pizza Casserole that combines the flavors of pizza with nutritious ingredients.
Ingredients
- 4 medium zucchini, thinly sliced
- 1 lb lean ground turkey or ground chicken
- 1 small onion, diced
- 3 cloves garlic, minced
- 1½ cups marinara sauce
- 1½ cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 cup sliced mushrooms
- 1 small bell pepper, diced
- ½ tsp dried oregano
- 1 tsp Italian seasoning
- ½ tsp turmeric
- ½ tsp smoked paprika
- ½ tsp black pepper
- ½ tsp salt
- 1 tbsp olive oil
- ¼ cup fresh basil, chopped
Instructions
- Preheat oven to 375°F. Lightly grease a 9×13-inch baking dish.
- Arrange the sliced zucchini on a baking sheet. Sprinkle lightly with salt and let sit for 10 minutes. Pat dry with paper towels to remove excess moisture.
- Heat olive oil in a large skillet over medium-high heat. Add ground turkey or chicken and cook for 5–7 minutes, breaking it apart as it cooks.
- Add onion, garlic, mushrooms, and bell pepper. Cook for another 4–5 minutes.
- Stir in marinara sauce, oregano, Italian seasoning, turmeric, smoked paprika, and black pepper. Simmer for 3 minutes.
- Arrange half of the zucchini in the baking dish. Spoon half of the meat mixture over it and sprinkle with half of the mozzarella.
- Repeat with the remaining zucchini, meat mixture, and mozzarella.
- Sprinkle Parmesan evenly over the top.
- Bake uncovered for 25–30 minutes, until bubbling and the cheese is golden.
- Let rest for 5–10 minutes, then garnish with fresh basil and serve.
Notes
- For extra pizza flavor, add sliced fresh tomatoes, olives, or a small amount of turkey pepperoni.
