Description
A refreshing and crunchy Apple Cranberry Coleslaw that combines the sweetness of apples and cranberries with the crunch of cabbage and nuts, perfect for any gathering.
Ingredients
- 6 cups shredded green cabbage
- 2 cups shredded red cabbage
- 1 large apple, thinly sliced or julienned
- 1/2 cup dried cranberries
- 1/2 cup shredded carrots
- 1/3 cup chopped pecans or walnuts
- 2 green onions, sliced
- 3/4 cup mayonnaise
- 1/4 cup sour cream
- 2 tbsp apple cider vinegar
- 2 tbsp honey
- 1 tbsp fresh lemon juice
- 1/2 tsp Dijon mustard
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Add the green cabbage, red cabbage, apple, cranberries, carrots, nuts, and green onions to a large bowl.
- In a separate bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, honey, lemon juice, Dijon mustard, salt, and black pepper.
- Pour the dressing over the cabbage mixture.
- Toss gently until everything is evenly coated.
- Cover and refrigerate for 30–60 minutes before serving to let the flavors blend.
- Give it another gentle toss just before serving.
Notes
- Toss the sliced apples with a little lemon juice before adding them to help prevent browning.
