Description

Apple Pie Bombs are delicious pastry treats filled with a warm apple filling, coated in cinnamon sugar, and drizzled with a sweet glaze.

Ingredients

  • For the Apple Filling
  • 2 medium apples, peeled, cored, and finely diced
  • 2 tbsp unsalted butter
  • ¼ cup brown sugar
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tsp lemon juice
  • 1 tsp cornstarch
  • 1 tbsp water
  • For the Bombs
  • 1 can (16 oz) refrigerated flaky biscuit dough
  • 3 tbsp unsalted butter, melted
  • ¼ cup granulated sugar
  • 1 tsp ground cinnamon
  • For the Glaze
  • 1 cup powdered sugar
  • 2 tbsp milk
  • ½ tsp vanilla extract

Instructions

  1. Preheat the oven to 375°F. Line a baking sheet with parchment paper.
  2. Make the apple filling. Melt 2 tablespoons butter in a skillet over medium heat. Add the diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook for 4–5 minutes until the apples begin to soften.
  3. Mix the cornstarch and water in a small bowl. Stir into the apples and cook for another 1–2 minutes until the mixture thickens. Remove from the heat and let cool.
  4. Prepare the dough. Separate the biscuit dough into individual biscuits. Flatten each biscuit into a round about 4 inches wide.
  5. Fill the bombs. Place about 1 tablespoon of apple filling in the center of each biscuit. Pull the edges up and around the filling, then pinch firmly to seal. Place seam-side down on the baking sheet.
  6. Add the cinnamon butter. Brush each dough ball with melted butter. Combine the granulated sugar and cinnamon, then sprinkle generously over the tops.
  7. Bake for 14–18 minutes, or until golden brown and cooked through.
  8. Make the glaze. Whisk together powdered sugar, milk, and vanilla until smooth.
  9. Drizzle the glaze over the warm apple pie bombs and serve.

Notes

  • Make sure the apple filling has cooled before stuffing the biscuits. This makes the dough easier to seal and helps prevent the filling from leaking during baking.
