Description

Apple Pie Cinnamon Roll Cups are a delightful dessert that combines the flavors of apple pie and cinnamon rolls into a fun, bite-sized treat.

Ingredients

  • 2 cans refrigerated cinnamon rolls (8 rolls each; use 12)
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • 2 medium apples, peeled and finely diced
  • 2 tablespoons unsalted butter
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 4 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the Oven: Preheat the oven to 375°F. Lightly grease a 12-cup muffin tin with nonstick cooking spray.
  2. Make the Apple Filling: Melt butter in a skillet over medium heat. Add diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook for 4–5 minutes until the apples begin to soften.
  3. Thicken the Filling: Mix cornstarch and water in a small bowl. Stir into the apple mixture and cook for another 1–2 minutes until thickened. Remove from heat and stir in vanilla extract. Allow to cool slightly.
  4. Prepare the Cinnamon Rolls: Separate the refrigerated cinnamon rolls. Reserve the icing for later. Gently flatten each roll slightly with your hands.
  5. Shape the Cups: Press one cinnamon roll into each muffin cup, spreading the dough across the bottom and up the sides to create a small cup.
  6. Pre-Bake: Bake the cinnamon roll cups for 5 minutes to help them hold their shape.
  7. Add the Apple Filling: Remove the muffin tin from the oven. Gently press down the centers if they have puffed up. Spoon the apple pie filling evenly into each cup.
  8. Bake Until Golden: Return to the oven and bake for another 8–12 minutes, until the cinnamon roll dough is golden brown and fully cooked.
  9. Prepare the Cream Cheese Glaze: In a bowl, beat softened cream cheese, powdered sugar, milk, and vanilla extract until smooth and creamy.
  10. Cool the Cups: Allow the cinnamon roll cups to cool in the muffin tin for 5–10 minutes before carefully removing them.
  11. Add the Glaze: Drizzle the cream cheese glaze over each apple pie cinnamon roll cup. Add the reserved cinnamon roll icing if desired.
  12. Serve: Enjoy warm with extra cinnamon or a drizzle of caramel sauce.

Notes
