Description

Apple Pie Enchiladas are a delightful twist on traditional apple pie, combining the flavors of apple pie filling wrapped in flour tortillas and topped with a rich caramel sauce and a sweet vanilla glaze.

Ingredients

  • 8 medium flour tortillas (8-inch)
  • 2 cans (21 oz each) apple pie filling
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • ½ cup unsalted butter
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • ½ cup water
  • 1 teaspoon ground cinnamon
  • ½ cup powdered sugar
  • 1–2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven: Set oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. Prepare the filling: Combine apple pie filling, cinnamon, nutmeg, and vanilla extract in a bowl. Cut any large apple slices into smaller pieces.
  3. Fill the tortillas: Spoon approximately ⅓ cup of apple filling onto each tortilla. Roll tightly and place seam-side down in the baking dish.
  4. Make the caramel sauce: Melt butter in a saucepan over medium heat. Add brown sugar, granulated sugar, water, and cinnamon. Stir and simmer for 3–5 minutes until slightly thickened.
  5. Pour the sauce: Evenly pour the warm caramel sauce over the rolled tortillas. Let stand for 10 minutes to absorb some sauce.
  6. Bake: Bake uncovered for 25–30 minutes, until the tortillas are golden brown and the filling is bubbling.
  7. Prepare the glaze: Mix powdered sugar, milk, and vanilla until smooth.
  8. Finish and serve: Let cool for 5–10 minutes, drizzle with vanilla glaze, and serve warm.

Notes

  • For a richer flavor, consider adding chopped nuts to the apple filling.
  • These enchiladas can be served with ice cream for an extra treat.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
