Description
Delicious Apple Snickerdoodle Bars combining the flavors of cinnamon and apples in a soft, chewy dessert.
Ingredients
- Apple Filling
- 2 medium Granny Smith or Honeycrisp apples, peeled and diced (about 2 cups)
- 1 tablespoon granulated sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon lemon juice
- Bar Batter
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
- ¼ cup whole milk
- Cinnamon-Sugar Topping
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- Optional Glaze
- 1 cup powdered sugar
- 2 tablespoons milk
- ½ teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease or line a 9 x 9-inch baking pan with parchment paper.
- In a small bowl, combine the diced apples, 1 tablespoon sugar, 1 teaspoon cinnamon, and lemon juice. Set aside while preparing the batter.
- In a large bowl, beat the butter and 1 cup sugar until light and fluffy, about 2–3 minutes. Beat in the eggs, one at a time. Mix in the vanilla extract.
- In a separate bowl, whisk together the flour, cream of tartar, baking powder, salt, and ½ teaspoon cinnamon. Add the dry ingredients to the wet ingredients alternately with the milk, mixing just until combined.
- Spread half of the batter into the prepared pan. Evenly distribute the apple mixture over the batter. Spoon the remaining batter over the apples and gently spread to cover. Mix the 2 tablespoons sugar and 1 teaspoon cinnamon, then sprinkle evenly over the top.
- Bake for 35–40 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
- Allow the bars to cool completely in the pan before slicing.
- Whisk together the powdered sugar, milk, and vanilla until smooth. Drizzle over the cooled bars before serving.
Notes
- Store in an airtight container for up to 2 days at room temperature, up to 5 days in the refrigerator, or freeze for up to 3 months.
- Honeycrisp, Granny Smith, Pink Lady, or Braeburn apples work well as they hold their shape during baking.
- For extra texture, fold ½ cup chopped pecans or walnuts into the batter.
- Serve warm with a scoop of vanilla ice cream or a drizzle of caramel sauce for a delicious dessert.
