Description

Arizona Sunshine Pie is a zesty and refreshing dessert made with whole lemons, eggs, and a buttery crust, topped with whipped cream for a delightful finish.


Ingredients

  • 1 medium whole lemon, about 120170 g
  • 4 large eggs
  • 115 g unsalted butter, melted and slightly cooled
  • 300 g granulated sugar
  • 5 ml vanilla extract
  • ¼ teaspoon salt
  • 1 unbaked 23 cm deep-dish pie crust
  • 240 ml heavy whipping cream
  • 25 g powdered sugar
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 175°C.
  2. Wash and scrub the lemon very thoroughly because the peel will be used. Trim off both ends and cut the lemon into small pieces, removing all the seeds.
  3. Place the lemon pieces into a high-powered blender or food processor. Add the eggs, melted butter, sugar, vanilla, and salt. Blend for 60–90 seconds until smooth and creamy.
  4. Pour the lemon mixture into the unbaked pie crust and place the pie dish on a baking tray.
  5. Bake at 175°C for 35–40 minutes, until the edges are set and the center has a slight jiggle. Cover with aluminum foil if browning too quickly.
  6. Remove the pie from the oven and let it cool at room temperature for about 1 hour, then refrigerate for at least 2 hours until chilled and firm.
  7. Beat the cold heavy cream, powdered sugar, and vanilla until soft-to-medium peaks form. Spread or pipe the whipped cream over the chilled pie just before serving.
  8. Slice the chilled pie and serve with whipped cream, garnished with thin lemon slices or grated lemon zest.

Notes

  • Use a fresh, thin-skinned lemon when possible.
  • Remove every seed before blending.
  • A powerful blender produces the smoothest filling.
  • Don’t worry if the center looks slightly jiggly when it comes out—the custard continues setting as it cools.
  • Chill thoroughly before slicing for the cleanest pieces.
  • If you prefer a less intense lemon flavor, remove some of the white pith before blending.
  • Cover and refrigerate for up to 4 days. Add whipped cream shortly before serving for the best texture.
