Description
A refreshing and nutritious salad combining tuna, avocado, and crunchy vegetables, perfect for a light meal or side dish.
Ingredients
- 2 cans tuna, drained
- 1 large ripe avocado, diced
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 2 celery stalks, finely chopped
- ¼ small red onion, thinly sliced
- 3 cups chopped romaine lettuce
- ½ cup sweet corn, drained
- 2 tablespoons chopped fresh parsley or cilantro
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- ½ teaspoon honey, optional
- ¼ teaspoon salt, or to taste
- ¼ teaspoon black pepper
- ¼ cup roasted sunflower seeds (optional)
- ¼ cup crushed croutons (optional)
- 2 tablespoons toasted pumpkin seeds (optional)
Instructions
- Prepare the vegetables. Wash and dry the lettuce, cucumber, tomatoes, celery, and herbs. Dice the cucumber and avocado, halve the tomatoes, and thinly slice the red onion.
- Drain the tuna. Open the tuna cans and drain them thoroughly. Flake the tuna with a fork, leaving some larger pieces for a satisfying texture.
- Make the dressing. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, honey, salt, and black pepper until combined.
- Combine the salad. In a large bowl, add the romaine lettuce, cucumber, tomatoes, celery, red onion, corn, and tuna. Gently toss to distribute the ingredients.
- Add the avocado. Fold in the diced avocado carefully to keep the pieces intact.
- Dress the salad. Pour the lemon dressing over the salad and toss gently until everything is lightly coated.
- Add the crunch. Sprinkle with sunflower seeds, pumpkin seeds, or crushed croutons just before serving.
- Serve immediately. Garnish with fresh parsley or cilantro and an extra squeeze of lemon, if desired.
Notes
- Choose ripe but firm avocado: It should be creamy without turning mushy when tossed.
- Drain tuna well: Excess liquid can dilute the dressing.
- Keep it crunchy: Add seeds and croutons right before serving.
- Adjust the flavor: Add more lemon for brightness or a little extra honey to balance the acidity.
- Make it creamy: Replace half the olive oil with 2 tablespoons of Greek yogurt or mayonnaise if you prefer a creamier dressing.
