Description

Baked Cheese & Broccoli Patties are a delicious and healthy snack made with broccoli, cheese, and spices, perfect for any occasion.


Ingredients

  • 340 g frozen broccoli, thawed and well drained
  • ¾ cup (75 g) panko breadcrumbs
  • ½ cup (50 g) shredded sharp cheddar cheese
  • ⅓ cup (30 g) grated Parmesan cheese
  • 2 large eggs
  • ½ small onion — about 60 g, finely chopped
  • 2 cloves garlic, minced
  • 2 teaspoons (10 mL) olive oil
  • ½ teaspoon (2.5 mL) salt
  • ¼ teaspoon (1.25 mL) black pepper
  • ¼ teaspoon (1.25 mL) garlic powder
  • ¼ teaspoon (1.25 mL) paprika or Old Bay seasoning, optional

Instructions

  1. Preheat the oven: Set the oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it.
  2. Prepare the broccoli: Thaw the broccoli completely. Place it in a clean kitchen towel and squeeze out as much moisture as possible. Finely chop the broccoli.
  3. Sauté the aromatics: Heat the olive oil in a small skillet over medium heat. Add the onion and garlic and cook for 3–4 minutes, until softened. Let cool slightly.
  4. Make the mixture: In a large bowl, combine the broccoli, sautéed onion and garlic, panko, cheddar, Parmesan, eggs, salt, pepper, garlic powder, and paprika. Mix until well combined and firm enough to shape.
  5. Shape the patties: Divide the mixture into about 8 portions. Form each into a patty about 1–1.5 cm thick and place on the prepared baking sheet.
  6. Bake: Bake for 15 minutes. Carefully flip each patty and bake for another 12–15 minutes, until both sides are golden brown and crisp.
  7. Serve: Let the patties cool for 2–3 minutes, then serve warm with ranch, sour cream, garlic aioli, or your favorite dipping sauce.

Notes

  • If the mixture feels too wet or crumbly, adjust with a little extra panko.
  • Properly drained broccoli is the biggest factor in getting patties that hold together.
