Ingredients

  • 3 medium zucchini, grated
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • ¾ cup breadcrumbs
  • 2 cloves garlic, minced
  • 2 tbsp finely chopped fresh parsley
  • ½ tsp Italian seasoning
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp olive oil
  • ¼ cup shredded cheddar cheese, for topping

Instructions

  1. Preheat the oven: Preheat oven to 400°F. Line a baking sheet with parchment paper and lightly grease it.
  2. Prepare the zucchini: Place the grated zucchini in a clean kitchen towel and squeeze firmly to remove as much excess moisture as possible.
  3. Make the mixture: In a large bowl, combine zucchini, mozzarella, Parmesan, eggs, breadcrumbs, garlic, parsley, Italian seasoning, garlic powder, salt, and black pepper. Mix until well combined.
  4. Shape the bites: Scoop about 1½ tablespoons of the mixture and form into small balls or slightly flattened bites. Place them on the prepared baking sheet.
  5. Add cheese: Sprinkle a little shredded cheddar over each bite.
  6. Bake: Brush or lightly drizzle the bites with olive oil. Bake for 20–25 minutes, flipping halfway through, until golden and crisp around the edges.
  7. Make them extra crispy: Broil for 1–2 minutes at the end, watching closely, until the cheese is bubbly and lightly browned.
  8. Serve: Let cool for a few minutes and serve warm with ranch dressing, marinara sauce, or garlic aioli for dipping.
