Ingredients

  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup whole milk
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 cups peeled and finely diced apples
  • 1 tablespoon lemon juice
  • 1½ cups powdered sugar
  • 2 tablespoons milk
  • 1 tablespoon melted butter
  • ½ teaspoon ground cinnamon
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F. Line a baking sheet with parchment paper and lightly grease it.
  2. Toss the diced apples with lemon juice and set aside.
  3. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  4. In another bowl, whisk together the eggs, milk, melted butter, and vanilla.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Gently fold in the diced apples.
  7. Drop heaping spoonfuls of batter onto the prepared baking sheet, leaving about 2 inches between each fritter.
  8. Bake for 18–22 minutes, until puffed and lightly golden.
  9. For a deeper golden exterior, brush the fritters lightly with melted butter and bake for another 2–3 minutes.
  10. Whisk together the powdered sugar, milk, melted butter, cinnamon, and vanilla until smooth.
  11. Drizzle the glaze generously over the warm fritters.
  12. Let the glaze set for a few minutes before serving.
