Ingredients
- 1 block (14 ounces) firm tofu, drained and pressed
- 2 tablespoons olive oil
- 2 tablespoons lemon juice (freshly squeezed)
- 1 teaspoon lemon zest
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F. Line a baking sheet with parchment paper.
- Cut the pressed tofu into 1-inch cubes and place them in a large bowl.
- In a small bowl, whisk together the olive oil, lemon juice, lemon zest, garlic powder, onion powder, black pepper, and salt.
- Pour the marinade over the tofu cubes and gently toss to coat evenly. Allow the tofu to marinate for at least 15 minutes for better flavor.
- Spread the marinated tofu cubes in a single layer on the prepared baking sheet.
- Bake in the preheated oven for 25-30 minutes, flipping the tofu halfway through, until golden brown and crispy.
- Remove from the oven and let cool slightly. Garnish with fresh parsley before serving.
Notes
- For a spicier kick, add 1/2 teaspoon of red pepper flakes to the marinade.
- To make it a complete meal, serve the baked tofu over a bed of quinoa or brown rice, and add steamed vegetables on the side.
