Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted and cooled
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 1/2 cups fresh strawberries, hulled and diced
  • For the streusel topping:
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar, packed
  • 1/4 cup unsalted butter, cold and cubed
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease with cooking spray.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine the melted butter, egg, vanilla extract, and buttermilk. Mix well until combined.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the diced strawberries, being careful not to overmix.
  5. In a small bowl, prepare the streusel topping by combining the flour, brown sugar, cold cubed butter, and cinnamon. Use a fork or your fingers to mix until crumbly.
  6. Scoop the muffin batter into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle the streusel topping evenly over each muffin.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
