Description
Delicious and nutritious breakfast squares made with bananas, cottage cheese, and chocolate chips.
Ingredients
- 2 ripe bananas, mashed
- 1 cup cottage cheese
- 2 large eggs
- ¼ cup maple syrup
- 1 tsp vanilla extract
- 1 ½ cups rolled oats
- 1 tsp baking powder
- ½ tsp cinnamon
- ¼ tsp salt
- ½ cup chocolate chips
- 2 tbsp chopped walnuts, optional
Instructions
- Preheat oven to 350°F. Grease an 8×8-inch baking pan or line it with parchment paper.
- In a large bowl, whisk together mashed bananas, cottage cheese, eggs, maple syrup, and vanilla until well combined.
- Stir in rolled oats, baking powder, cinnamon, and salt.
- Fold in the chocolate chips and walnuts if using. Reserve a few chocolate chips for the top.
- Pour the batter into the prepared pan and spread evenly. Sprinkle the reserved chocolate chips over the top.
- Bake for 30–35 minutes, or until the center is firm and a toothpick inserted in the middle comes out mostly clean.
- Let cool for at least 15 minutes before cutting into squares.
Notes
- For a smoother texture, blend the cottage cheese with the bananas before mixing in the remaining ingredients.
