Description

Delicious banana cream-filled donuts topped with a crunchy crumble and a sweet glaze.

Ingredients

  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ tsp ground cinnamon
  • ½ cup mashed ripe banana
  • ½ cup granulated sugar
  • 1 large egg
  • ¼ cup unsalted butter, melted
  • ½ cup buttermilk
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 ripe banana, mashed
  • 2 tbsp instant vanilla pudding mix
  • ½ cup all-purpose flour
  • ¼ cup brown sugar
  • ¼ tsp cinnamon
  • 3 tbsp cold butter, cubed
  • Pinch of salt
  • ½ cup powdered sugar
  • 1–2 tbsp milk
  • ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F. Lightly grease a 12-cup donut pan.
  2. Combine the flour, brown sugar, cinnamon, and salt for the crumble. Cut in the cold butter until coarse crumbs form. Set aside.
  3. Whisk together the flour, baking powder, baking soda, salt, and cinnamon for the dry ingredients.
  4. In another bowl, whisk together the mashed banana, sugar, egg, melted butter, buttermilk, and vanilla. Gradually add the dry ingredients and stir just until combined.
  5. Spoon or pipe the batter into the donut cavities, filling each about ¾ full. Sprinkle the crumble topping over each donut.
  6. Bake for 12–15 minutes, or until the donuts spring back lightly when touched. Let them cool in the pan for about 5 minutes, then transfer to a wire rack.
  7. Beat the heavy cream, powdered sugar, and vanilla until soft peaks form. Add the mashed banana and pudding mix and beat until thick and creamy.
  8. Once the donuts are completely cool, use a piping bag fitted with a small round tip to pipe banana cream into the sides of each donut.
  9. Whisk the powdered sugar, milk, and vanilla until smooth. Drizzle lightly over the donuts.
  10. Add a little extra crumble on top and serve.

Notes

  • Ensure the bananas are ripe for the best flavor.
  • Store any leftover donuts in an airtight container at room temperature.
  • For a richer flavor, use brown sugar in the donut batter.
