Description
A delicious and moist banana walnut cake topped with creamy frosting and toasted walnuts.
Ingredients
- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup buttermilk
- 3/4 cup chopped walnuts
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
- 2–3 tablespoons heavy cream or milk
- 1/2 cup chopped walnuts, lightly toasted
- 1 banana, sliced (optional)
Instructions
- Preheat the oven to 350°F. Grease and line a 9×13-inch baking pan with parchment paper.
- In a bowl, whisk together flour, baking soda, salt, and cinnamon.
- In a separate large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla and mashed bananas.
- Gradually add the dry ingredients, alternating with the buttermilk. Mix just until combined.
- Fold in the chopped walnuts.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
- Cool completely before frosting.
- To make the frosting, beat the cream cheese and butter until smooth. Gradually add the powdered sugar, then mix in the vanilla and enough cream or milk to reach a smooth, spreadable consistency.
- Spread the frosting evenly over the cooled cake.
- Sprinkle with toasted walnuts and garnish with banana slices if desired.
- Refrigerate for 30–60 minutes before slicing for the best texture.
Notes
- Toasting the walnuts for 5–7 minutes at 350°F brings out their flavor and makes the cake extra delicious.
