Ingredients

  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup buttermilk
  • 3/4 cup chopped walnuts
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 23 tablespoons heavy cream or milk
  • 1/2 cup chopped walnuts, lightly toasted
  • 1 banana, sliced (optional)

Instructions

  1. Preheat the oven to 350°F. Grease and line a 9×13-inch baking pan with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, and cinnamon.
  3. In a separate large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Mix in the vanilla and mashed bananas.
  5. Gradually add the dry ingredients, alternating with the buttermilk. Mix just until combined.
  6. Fold in the chopped walnuts.
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool completely before frosting.
  10. To make the frosting, beat the cream cheese and butter until smooth. Gradually add the powdered sugar, then mix in the vanilla and enough cream or milk to reach a smooth, spreadable consistency.
  11. Spread the frosting evenly over the cooled cake.
  12. Sprinkle with toasted walnuts and garnish with banana slices if desired.
  13. Refrigerate for 30–60 minutes before slicing for the best texture.

  • Toasting the walnuts for 5–7 minutes at 350°F brings out their flavor and makes the cake extra delicious.
