Description

A quick and tasty Beef & Veggie Skillet recipe that combines lean ground beef with a variety of colorful vegetables and a flavorful sauce.


Ingredients

  • lbs (680 g) lean ground beef (85–90% lean)
  • 1 tbsp olive oil (if needed)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp Italian seasoning
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 2 carrots, sliced
  • 1½ cups broccoli florets
  • 1 cup sliced mushrooms
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp tomato paste
  • 1 tsp Dijon mustard
  • 1 tsp soy sauce
  • 1 tsp cornstarch
  • 2 tbsp water
  • 2 tbsp unsalted butter
  • 2 tbsp chopped fresh parsley
  • ½ cup shredded Parmesan cheese (optional)

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground beef and cook for 6–8 minutes, breaking it apart as it cooks. Season with the salt, pepper, garlic powder, onion powder, smoked paprika, and Italian seasoning. Drain excess grease if necessary.
  2. Add the onion, carrots, bell pepper, mushrooms, and zucchini to the skillet. Cook for 5–6 minutes, stirring occasionally. Add the broccoli and garlic, then cook for another 2–3 minutes, until the vegetables are crisp-tender.
  3. In a small bowl, whisk together the beef broth, Worcestershire sauce, tomato paste, Dijon mustard, and soy sauce. In a separate bowl, mix the cornstarch and water to make a slurry.
  4. Pour the broth mixture into the skillet and stir well. Add the cornstarch slurry and cook for 2–3 minutes, stirring constantly, until the sauce thickens. Stir in the butter until melted.
  5. Sprinkle with chopped parsley and Parmesan cheese, if desired.
  6. Serve hot with steamed white or brown rice, buttered egg noodles, mashed potatoes, cauliflower rice, crusty bread, or a simple green salad.

  • For a spicier version, add red pepper flakes.
